Mama Carla’s Stir Fried Super Rice
First make super rice. This is a leftover recipe.
¼ cup chopped carrots
¼ cup of chopped celery
¼ cup chopped onion
¼ cup chopped green bell pepper
1 cup of diced Turkey ham
1 egg
1 tbsp olive oil
1 tbsp soy sauce
1 cup of super rice
Sauté veggies and ham cubes in olive oil over medium heat until veggies are slightly crunchy
and move them to the outer edge of the frying pan. Scramble egg with salt and pepper and
pour into center of pan. Scramble until not gooey. Chop it up with spatula and mix with
veggies. Mix in super rice and heat everything together. Great for breakfast lunch or dinner.
